Mom's Banana Bread

 

Hello baker friends out there!

Okay! So if you’ve read the buzz, you know a brief story about how my baking journey start. My mother, lovely lady, has inspired me in many ways… but baking is not her strong suit. I’ll take you back, circa 1995. Let me set the scene: the family kitchen. My dad, sitting in the other room enjoying the regular television programming of the day. My sister, Michelle, me, my mom, and the kitchen… COVERED in flour.

My mom, again, not a baker. But man, she makes a dang good banana bread. When I first started this bakery, banana bread was top on my list. I knew of a wonderful tried and true recipe… easy peasy. Little did I know, baking banana bread takes a bit of pizzazz to make and to make as good as mom does.

In my 2019 Baking Bucket List, I VOWED to master this banana bread recipe. And you guys, I think this is it!

From a perfectionist like me I am definitely going to try again and it will be even better, but it’s here and I think you will enjoy it as much as me!

Mom's Banana Bread

Soft, moist, full of buttery banana and vanilla with a hint of sweet, woody cinnamon. Your perfect breakfast addition.

Makes: 1 Loaf

Ingredients:
  • 2 1/4 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable shortening
  • 2 eggs
  • 3 large ripe bananas, mashed
  • 1/2 cup chopped walnuts, optional
  • Sprinkles Cinnamon, optional

Instructions:
  1. Preheat oven to 350 degrees. Grease a 9"x5" loaf pan with vegetable shortening. Set aside.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a medium sized bowl, sift flour, baking soda, baking powder, and salt. Set aside.
  4. beat sugar, vegetable shortening and eggs for 3 minutes. The mixure will be a fluffy texture. Blend in Bananas.
  5. Add the banana mixure to the flour mixture. Stir with a wooden spoon just until well blended. If you are using walnuts in your banana bread, add them to the mixture now.
  6. Pour into greased loaf pan. Sprinkle cinnamon on top for an extra nutty flavor.
  7. Bake for 45 to 60 minutes, or unitl a toothpick inserted into the center of the loaf comes out clean. Remove from the oven and allow bread too cool slightly before revoming it from the pan, about 5 minutes. Remove loaf from the pan, and allow to cool completely on a wire rack.
